Apple Carrot Baked Oatmeal
Ingredients
- 2 cups rolled oats
- 1 tsp. baking powder
- 1½ tsp. cinnamon
- ¼ tsp. salt
- ½ cup walnuts, chopped
- ½ cup dried fruit of choice
- 1 large egg
- 1¾ cup milk of choice
- ⅓ cup honey
- 3 tsp. melted unsalted butter or coconut oil
- 1 tsp. vanilla extract
- ⅔ cup finely grated carrots (~2 medium carrots)
- 1 medium apple, chopped
- Thinly sliced apple, thyme sprigs, or any other desired toppings
Instructions
- Preheat oven to 375°F, and grease a 8×8” baking dish.
- In a large mixing bowl, combine the oats, baking powder, cinnamon, and salt. Whisk well to combine. Stir in the walnuts and dried fruit.
- In a separate bowl, combine the egg, milk, honey, butter, and vanilla extract. Whisk well. Add the grated carrots and chopped apple to the liquid mixture and stir to combine.
- Add the liquid ingredients to the dry ingredients and mix well to make sure all ingredients are evenly distributed and the oats are all moistened.
- Transfer the mixture to the greased baking dish and add any desired toppings.
- Bake for 40-45 minutes, until the top is golden and the liquid is absorbed. Let cool slightly before scooping out and eating.
