Apple Carrot Baked Oatmeal

Adapted from Thyme and Toast

 

Ingredients:

  • 2 cups rolled oats

  • 1 teaspoon baking powder

  • 1½ teaspoons cinnamon

  • ¼ teaspoon salt

  • ½ cup chopped walnuts

  • ½ cup dried fruit of choice

  • 1 large egg

  • 1¾ cup milk of choice

  • ⅓ cup honey

  • 3 teaspoons melted unsalted butter or coconut oil

  • 1 teaspoon vanilla extract

  • ⅔ cup finely grated carrots (~2 medium carrots)

  • 1 medium apple, chopped

  • Top with a thinly sliced apple and thyme sprigs

 
 

Directions:

  1. Preheat the oven to 375 degrees F and grease an 8-inch x 8-inch baking dish.
  2. In a large mixing bowl, combine the oats, baking powder, cinnamon, and salt. Whisk well to combine. Stir in the walnuts and dried fruit.
  3. In a separate bowl, combine the egg, milk, honey, butter, and vanilla extract. Whisk well. Add the grated carrots and chopped apple to the liquid mixture and stir to combine.
  4. Add the liquid ingredients to the dry ingredients and mix well to make sure all ingredients are evenly distributed and the oats are all wet.
  5. Transfer the mixture to the greased baking dish and add any desired toppings.
  6. Bake for 40-45 minutes, until the top is golden and the liquid is absorbed. Let cool slightly before scooping out and eating. Store leftovers in an air-tight container in the fridge.
