Apple Carrot Baked Oatmeal
Adapted from Thyme and Toast
Ingredients:

2 cups rolled oats

1 teaspoon baking powder

1½ teaspoons cinnamon

¼ teaspoon salt

½ cup chopped walnuts

½ cup dried fruit of choice

1 large egg
-
1¾ cup milk of choice

⅓ cup honey
-
3 teaspoons melted unsalted butter or coconut oil

1 teaspoon vanilla extract

⅔ cup finely grated carrots (~2 medium carrots)

1 medium apple, chopped

Top with a thinly sliced apple and thyme sprigs
Directions:
- Preheat the oven to 375 degrees F and grease an 8-inch x 8-inch baking dish.
- In a large mixing bowl, combine the oats, baking powder, cinnamon, and salt. Whisk well to combine. Stir in the walnuts and dried fruit.
- In a separate bowl, combine the egg, milk, honey, butter, and vanilla extract. Whisk well. Add the grated carrots and chopped apple to the liquid mixture and stir to combine.
- Add the liquid ingredients to the dry ingredients and mix well to make sure all ingredients are evenly distributed and the oats are all wet.
- Transfer the mixture to the greased baking dish and add any desired toppings.
- Bake for 40-45 minutes, until the top is golden and the liquid is absorbed. Let cool slightly before scooping out and eating. Store leftovers in an air-tight container in the fridge.
