In Season: Celebration Salad w/ Madeline McKee

This Saturday, July 4th, join Madeline McKee in making her affordable and versatile Celebration Salad: a simple, Middle-Eastern inspired salad with couscous as a base using available vegetables, fresh herbs, garbanzo beans, and feta cheese. Madeline will share how many options one can have with a ‘base’ of the couscous and dressing (vegan, vegetarian, or topped with a protein as an entree), the reality of how expensive grocery stores can be today, and how affordable healthy, local food can be.

This In Season cooking demo starts at 11AM and 12PM inside the Pavilion, and is FREE to attend!

About the chef:
“I have spent over 30 years working in the food industry. I began working in the kitchen as a dishwasher, a line cook, and then line manager. I gradually moved onto the front of the house (restaurant), as a host, server, cocktail server, a bartender, building wine menus, managing the floor, starting up our own off grid Family Suppers, and eventually owning a small fine dining Spanish restaurant in Eugene, Oregon. It was called Zelaya, around the corner from the W.O.W. Hall– beautiful experience. I have also been fortunate enough to have worked for some of Portland’s finest restaurants and chefs. I am passionate about great food, kind community, and connecting the two.”
