Spring Tuna Salad

​Ingredients

  • 1 can jalapeño tuna from Brandywine Fisheries
  • Mayonnaise, to taste
  • 1 shallot
  • 1 bunch of white salad turnips
  • 1 bunch of radishes of choice
  • 1 bunch of mustard greens
  • 1 bunch of sorrel
  • 1 bag of mixed greens
  • Salt and pepper
  • Sauerkraut (optional)
  • Kale flowers (optional)

Instructions

  1. Mix tuna with desired amount of mayonnaise, salt, and pepper to taste.
  2. Chop shallot, salad turnips, and radishes into a very small dice and mix into tuna mixture.
  3. Finely chop mustard greens and half of the sorrel and add to tuna mixture.
  4. Make a bed of mixed greens, adding in remaining sorrel.
  5. Spoon tuna on top of mixed greens. Add a spoonful of sauerkraut on the side, if desired.
  6. Garnish with kale flowers, if desired.
