Spring Tuna Salad
Ingredients
- 1 can jalapeño tuna from Brandywine Fisheries
- Mayonnaise, to taste
- 1 shallot
- 1 bunch of white salad turnips
- 1 bunch of radishes of choice
- 1 bunch of mustard greens
- 1 bunch of sorrel
- 1 bag of mixed greens
- Salt and pepper
- Sauerkraut (optional)
- Kale flowers (optional)
Instructions
- Mix tuna with desired amount of mayonnaise, salt, and pepper to taste.
- Chop shallot, salad turnips, and radishes into a very small dice and mix into tuna mixture.
- Finely chop mustard greens and half of the sorrel and add to tuna mixture.
- Make a bed of mixed greens, adding in remaining sorrel.
- Spoon tuna on top of mixed greens. Add a spoonful of sauerkraut on the side, if desired.
- Garnish with kale flowers, if desired.
