Mixed Spring Green Salad with Ginger-Miso Dressing
Ingredients
For the dressing:
- Scant ¼ cup garlic, minced
- Scant ¼ cup fresh ginger, minced
- ½ cup olive oil
- ⅓ cup rice vinegar
- 1 tbsp. sesame oil (optional)
- 1 heaping tbsp. honey
- 1 heaping tsp. miso
For the salad:
- Salad mix or mix of leafy greens, cut into bite-sized pieces
- Any other salad toppings of your choice (ex: shredded beets, carrots, cabbage, etc.)
Instructions
- Mix all ingredients for the dressing together in a jar with a lid.
- Pour over salad and enjoy immediately!
