Mixed Spring Green Salad with Ginger-Miso Dressing

Ingredients

For the dressing:

  • Scant ¼ cup garlic, minced 
  • Scant ¼ cup fresh ginger, minced 
  • ½ cup olive oil
  • ⅓ cup rice vinegar
  • 1 tbsp. sesame oil (optional)
  • 1 heaping tbsp. honey
  • 1 heaping tsp. miso

For the salad:

  • Salad mix or mix of leafy greens, cut into bite-sized pieces
  • Any other salad toppings of your choice (ex: shredded beets, carrots, cabbage, etc.)

Instructions

  1. Mix all ingredients for the dressing together in a jar with a lid.
  2. Pour over salad and enjoy immediately!
